Edamame Salad

frozen (thawed) edamame
rice wine vinegar
olive oil
bell pepper (finely chopped)
red onion (finely chopped)
shredded parmesan or mozzarella cheese
salt and pepper

optional: finely chopped raw zucchini or cucumber would be delicioso!
